Ingredients:

  • 4 slices Whole Wheat Brown Bread
  • 2 slices Cheddar Cheese
  • 2 Whole Eggs
  • 1 Onion, finely chopped
  • 1 Tomato, finely chopped
  • 1 Green Chilli, finely chopped
  • Salt, to taste
  • Oil or Butter, as required
  • 1/2 teaspoon Black Pepper Powder
  • 3 sprigs Coriander (Dhania) Leaves, finely chopped

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 2

Instructions:

  1. Make the Bhurji Filling:
    Heat oil or butter in a pan. Add finely chopped onions and green chilies, and cook until the onions turn soft and translucent. Add the chopped tomatoes, salt, black pepper, and coriander leaves, and cook for a minute.

  2. Prepare the Eggs:
    Crack the eggs into a bowl, beat them, and then add to the pan with the cooked onion-tomato mixture. Stir continuously to avoid overcooking the eggs, until they are softly scrambled. Turn off the heat and set the bhurji aside.

  3. Grill the Sandwich:
    In a grill pan, heat butter and place two slices of whole wheat bread. Top each slice with a slice of cheddar cheese, then spread the bhurji mixture over one slice. Cover with the second slice of bread.

  4. Grill Until Crisp:
    Grill the sandwich until it turns golden brown and crispy on both sides.

  5. Serve:
