Greek Quinoa Salad

Ingredients:

Red Quinoa 200g
Water 400ml
Extra Virgin Olive Oil to taste
Fine Salt to taste
Feta Cheese 200g
Cucumber 1
Red Onion ½
Cherry Tomatoes 200g
Greek Black Olives 50g
Fresh Mint 6 leaves
Extra Virgin Olive Oil to taste

Instructions:

  1. Cook the Quinoa:
    Begin by cooking the red quinoa. In a saucepan, add a drizzle of extra virgin olive oil. Once heated, pour in the quinoa and sauté it for a few minutes. Add water and a pinch of salt, then bring it to a boil. Lower the heat and cover, simmering for about 15 minutes, or until the quinoa is tender and the water has been absorbed. Remove from the heat and let it cool in a bowl.

  2. Prepare the Vegetables:
    While the quinoa cools, cut the feta cheese into small cubes. Slice the red onion thinly. Wash the cherry tomatoes and cut them into halves or quarters depending on your preference. Wash the cucumber, trim off the ends, and use a mandolin slicer to cut it into thin slices.

  3. Assemble the Salad:
    Once the quinoa has cooled, add the feta cubes, sliced onion, tomatoes, and cucumber to the quinoa. Add the black olives and tear the fresh mint leaves into smaller pieces.

  4. Dress the Salad:
    Drizzle a generous amount of extra virgin olive oil over the salad and mix everything together gently.

  5. Serve and Enjoy:
    The Greek Quinoa Salad is now ready to be served! It’s a fresh, light, and nutritious meal perfect for lunch or a light dinner. Enjoy it as a main dish or a side to complement other Mediterranean flavors.
