Ingredients:

For the Cake:

  • 2 cups All Purpose Flour (Maida)
  • 2 cups Caster Sugar
  • 1 cup Coca Cola
  • 3 tablespoons Cocoa Powder
  • 1/2 teaspoon Instant Coffee Powder (Espresso)
  • 1/2 cup Oil
  • 1 cup Buttermilk
  • 2-1/2 tablespoons Unsalted Butter
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract

For the Coca Cola Glaze:

  • 1/2 cup Unsalted Butter
  • 1/3 cup Coca Cola
  • 1/4 cup Cocoa Powder
  • 2 cups Caster Sugar
  • A pinch of Salt
  • 1/2 teaspoon Espresso Powder
  • 1/2 teaspoon Vanilla Extract

Prep Time: 20 minutes
Cook Time: 50 minutes

Instructions:

  1. Preheat your oven to 180°C (350°F) and allow it to heat for 12-15 minutes.
  2. Grease a Bundt pan with oil or butter and dust it lightly with flour. Set aside.
  3. Sift together the all-purpose flour, salt, and caster sugar in a bowl. Set aside.
  4. In a saucepan, combine Coca-Cola, cocoa powder, oil, butter, and espresso powder. Bring to a boil, then remove from heat.
  5. Pour the hot cola mixture into the dry ingredients and stir well to combine into a smooth batter.
  6. In a separate bowl, whisk together buttermilk, baking powder, and vanilla extract. Fold this mixture into the batter until well incorporated.
  7. Pour the batter into the prepared Bundt pan and gently tap the pan to release any air bubbles.
  8. Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before glazing.
  9. For the Coca Cola Glaze, heat the butter, Coca-Cola, cocoa powder, espresso powder, and salt in a saucepan until it comes to a boil. Remove from heat.
  10. Add the powdered sugar and vanilla extract to the saucepan and whisk vigorously until the glaze becomes smooth and shiny.
  11. Pour the glaze over the cooled cake. Garnish with fresh cream, nuts, or chocolate chips if desired.
  12. Serve your Coca Cola Bundt Cake as a delightful dessert or enjoy it during tea time.
