Instructions:
- Preparation Time: 15 minutes
- Cooking Time (Meatballs): 10 minutes (on the fry pan) + 3 hours (in the crock pot)
- Cooking Time (Sloppy Joe’s): Variable
For Meatballs:
- In a bowl, mix together pork, eggs, light soy sauce, and bread crumbs.
- Add onions, mashed potatoes, milk, salt & pepper to taste, and 1 tsp hot sauce. Combine well.
- Use your hands to shape the mixture into meatballs, roughly the size of large golf balls.
- Heat oil in a skillet over medium-high heat. Brown the meatballs well, turning to cook all sides for about 10 minutes.
- In a crock pot, mix Italian tomatoes, 2 cloves of garlic, cottage cheese, chives, and cilantro.
- Heat the sauce mixture in the crock pot on high until hot, then reduce heat to medium.
- Transfer the browned meatballs to the crock pot.
- Add a little water to the skillet used for browning the meatballs to deglaze it, scraping up any browned bits. Pour this into the crock pot.
- Cover the crock pot and cook on medium for 3 hours.
For Sloppy Joe’s:
- Mix sauce ingredients together and cook until the flavors meld.
- In a fry pan, combine all the meat mixture ingredients. Stir well to break up any lumps and cook until well done.
- Once the meat is cooked, pour in the sauce mixture, mix well, and serve on toasted sub rolls.
