Instructions

  2. Simmer the Mint: Reduce the heat to low and let the mixture simmer for about 5 minutes. Once done, remove from heat and allow it to cool slightly before straining, reserving the liquid.

  3. Create the Mint Gelato: In a mixing bowl, beat the mascarpone cheese with the mint syrup and an additional 1/4 cup of chopped mint until well combined. Pour the mixture into a shallow container and freeze until solid.

  4. Cook the Soup: In a large pot, combine the fresh green peas, diced potatoes, chopped green onions, lettuce, and vegetable stock. Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 10 minutes or until the peas and potatoes are tender.
