Risotto with Carrots and Sausage (Risotto con Carote e Salsiccia)

Instructions:

  1. Prepare the Carrots:
    Begin by thoroughly washing the carrots. Peel them and cut them into small pieces or rounds. Place the chopped carrots in a baking dish, drizzle with a little olive oil, and season with salt and pepper. Preheat your oven to 200ยฐC (390ยฐF) and roast the carrots for 30 minutes until they are tender and slightly caramelized.

  2. Toast the Sausage:
    While the carrots are roasting, remove the sausage meat from its casing. In a large pan, heat a little olive oil and cook the sausage over medium heat. Stir and break it up into small pieces, allowing it to brown for about 2 minutes. The sausage should have a slightly crispy texture on the outside.

  3. Cook the Risotto:
    In a separate pot, bring the beef broth to a simmer. Add the brown rice to a large pan or skillet and toast it for a minute. Gradually add the hot beef broth, one ladle at a time, stirring frequently to ensure the rice absorbs the liquid slowly. Continue adding broth as the rice absorbs it. This process will take about 25 minutes, and the rice should be creamy but al dente by the end.

  4. Combine and Finish:
    Once the risotto is cooked, stir in the roasted carrots, toasted sausage, and whole hazelnuts. Add small pieces of the Toma cheese to the risotto and stir until the cheese melts into the dish, creating a rich and creamy texture.

  5. Season and Serve:
    Taste the risotto and adjust the seasoning with salt and black pepper as needed. Serve the risotto hot, ensuring each plate has a generous portion of the sausage and roasted carrots. Garnish with extra hazelnuts if desired for added crunch.
