Savory Chicken Egg Noodle Stir-Fry

Title: Simple Chicken Fried Noodles

Ingredients:

  • 1/2 packet of egg noodles
  • 1 chicken thigh fillet, thinly sliced
  • 1 egg
  • 5 stalks of Chinese mustard greens (sawi hijau)
  • 1 sachet of sweet soy sauce (kecap manis)
  • Ground spices:
    • 2 cloves garlic
    • 3 shallots
    • A pinch of ground pepper
    • Salt to taste
    • Chicken seasoning powder (like Royco), to taste

Instructions:

  1. Boil the egg noodles and chicken thigh until cooked. Drain and set aside. Drizzle a bit of oil over the boiled noodles to prevent sticking, then mix in the sweet soy sauce until evenly coated.

  2. Grind garlic, shallots, pepper, and salt into a smooth paste using a mortar and pestle.

  3. Sauté the ground spices in a pan until fragrant. Add the egg, stir until cooked, then add the chicken slices. Mix well until combined.

  4. Add the Chinese mustard greens, stirring until all ingredients are well combined. Don’t forget to sprinkle in the chicken seasoning powder (Royco). Cook until everything is thoroughly cooked through.
