Ikan Salem with Tahu Bumbu Nusantara

Introduction

Ingredients

Cabe Merah Keriting (red chilies) 7 pieces
Cabe Rawit Hijau (green bird’s eye chilies) 7 pieces
Tomat (tomato) 1 piece
Bawang Putih (garlic) 5 cloves
Bawang Merah Besar (red onions) 3 large
Jahe (ginger) 3 pieces (about 3 inches)
Lengkuas (galangal) 2 pieces (about 2 inches)
Gula (sugar) To taste
Kaldu Bubuk (powdered broth) To taste
Minyak (oil) For frying

Instructions

  1. Prepare the Fish: Clean the Ikan Salem by removing the insides and gills. Rinse thoroughly and cut each fish in half. Set aside.
  2. Prepare the Tofu: Rinse the yellow tofu and cut it into halves or quarters, depending on your preference.
  3. Fry the Fish and Tofu: Heat oil in a pan over medium heat. Fry the fish and tofu until golden and cooked through. Remove from the pan and drain on paper towels to absorb excess oil.
  4. Make the Spice Paste: In a blender or mortar and pestle, combine the red chilies, green chilies, garlic, red onions, ginger, and galangal. Blend or pound until a smooth paste is formed.
  5. Sauté the Spice Paste: In the same pan used for frying, add a little more oil if necessary, and heat over medium heat. Add the spice paste and sauté until the oil separates and the spices are fragrant.
  6. Season the Paste: Stir in the powdered broth and sugar, adjusting to taste.
  7. Combine with Fish and Tofu: Gently add the fried fish and tofu to the pan, tossing to coat them evenly with the spice mixture. Cook for a few more minutes until everything is well combined and heated through.
  8. Serve: Remove from heat and transfer to a serving plate. Enjoy your Ikan Salem with Tahu Bumbu Nusantara hot with steamed rice.
