Linefish With Origanum Potatoes

  • 2 tomatoes, sliced

  • 10 capers

  2. Layer the thinly sliced potatoes, onions, minced garlic, chopped parsley, and marjoram in a shallow ovenproof dish. Drizzle half of the olive oil over the layers and season with salt and pepper to taste.

  3. Pour the water over the layered vegetables in the dish.

  4. Cover the dish with aluminum foil or a lid and bake in the preheated oven for 50 to 60 minutes, or until the potatoes are tender and cooked through.

  5. Once the potatoes are tender, remove the dish from the oven.

  6. Place the linefish fillets on top of the cooked potatoes in the dish.

  7. Arrange the sliced tomatoes over the linefish fillets.

  8. Pour the tomato sauce evenly over the tomatoes.

  9. Sprinkle the sugar over the tomato sauce, and scatter the capers on top.

  10. Drizzle the remaining olive oil over the fish and vegetables, and season with a little extra salt and pepper if desired.

  11. Cover the dish again and bake in the oven for an additional 15 to 20 minutes, or until the fish is cooked through and flakes easily with a fork.
