Taiwanese Beef Soup with Niu Row Mien Recipe
Ingredients:
- 500 grams beef (preferably chuck or shank)
- 5 ripe tomatoes
- 10 grams ginger (sliced or crushed)
- 2 stalks green onions (chopped)
- 150 ml soy sauce (light or regular)
- 1.5 liters water
- Seasoning powder (to taste)
- 2 packets Lu Pao (Taiwanese spice mix)

Prepare the Ingredients:
- Thoroughly wash the tomatoes, beef, ginger, and green onions.
- For the beef, bring a pot of water to a boil and add the beef. Boil briefly, then discard the water. Rinse the beef under cold water to remove impurities and set it aside.

Prep the Aromatics:
- Lightly crush the ginger.
- Chop the green onions into pieces.
- Make a small slit in the top of each tomato, but do not cut through to keep the tomato intact.

Cook the Soup:
- In a large pot, bring 1.5 liters of water to a boil.
- Add the beef, tomatoes, ginger, green onions, Lu Pao spice mix, and soy sauce.
- Reduce the heat to low and simmer gently for about 1 hour, or until the beef becomes tender.
- Season the soup with a bit of seasoning powder to taste, then adjust the flavor as needed.

- Serve the beef soup hot, accompanied by cooked noodles and chili sauce if desired.
- Garnish with additional chopped green onions on top.
