Instructions:
Step | Description |

1 | Bake yams (skin on) at 350Β°F (175Β°C) until tender when pierced with a fork, approximately 45 minutes to 1 hour. |
2 | Remove from oven and wrap in a damp paper towel to allow them to cool for 10 minutes. |
3 | Increase oven temperature to 450Β°F (230Β°C). |
4 | Peel off the skin from the yams. |
5 | Slice yams into 1/2″ thick rounds. For an extra-nice presentation, use a cookie cutter to create scalloped edges or fancy shapes. |
6 | Place yam slices in a shallow baking dish that has been sprayed with non-stick cooking spray and pour orange juice over all. |
7 | Mix nutmeg with brown sugar and sprinkle atop each slice. |
8 | Top each slice with finely chopped pecans. |
9 | Bake in the oven for 10 minutes, or until the sugar is melted and the pecans are slightly toasted. |
