Bubur Ayam Sawi: A Hearty Chicken and Vegetable Congee

Ingredients:

  • 1 portion of chicken fillet, boiled and finely chopped
  • A handful of finely sliced mustard greens
  • 1/4 cup grated corn
  • 2 pieces of tofu, cut into small cubes
  • 1 tablespoon white rice
  • 1 tablespoon red rice

Instructions:

  1. Begin by briefly boiling the chicken fillet until it’s fully cooked. Once done, finely chop the chicken into small pieces.

  2. In a slow cooker, combine the chopped chicken, finely sliced mustard greens, grated corn, and tofu cubes. Add both the white rice and red rice to the mixture.

  3. Set the slow cooker to cook on low for 5 to 6 hours, allowing all the flavors to meld together and the rice to soften into a creamy congee.

  4. Once the cooking time is complete and the congee is ready, serve it warm. For an added touch, you can garnish with your choice of crunchy fried shallots (UB) and a sprinkle of fresh herbs or crispy shallots (NY).
