For Mashed Potatoes:

Butter (Salted) 2 tablespoons
Milk 1 cup
Salt To taste
Black Pepper Powder To taste

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Total Time: 50 minutes

Servings: 4

Instructions

Step 1: Prepare the Mashed Potatoes

  1. Begin by bringing a large pot of salted water to a boil. Add the peeled and quartered potatoes, and cook for about 15 minutes or until theyโ€™re tender but still firm. Drain the water and set the potatoes aside.
  2. In a small saucepan, melt the salted butter and warm the milk over low heat. Once melted, pour the milk mixture into the cooked potatoes.
  3. Using a potato masher or an electric beater, mash the potatoes until theyโ€™re smooth and creamy. Season with salt and pepper to taste. Set aside.

Step 2: Prepare the BBQ Meatballs

  1. In a large mixing bowl, combine the ground chicken, minced garlic, egg, bread crumbs, red chilli powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.
  2. Roll about 1-2 tablespoons of the meatball mixture into small, round balls. Repeat this process for the entire mixture. For firmer meatballs, you can chill them in the fridge for about 15 minutes.
  3. Heat a large pan over medium-high heat and add a little oil. Once the oil is hot, add the meatballs and brown them on all sides. This should take about 5 minutes in total.
  4. Remove the meatballs from the pan and set them aside.

Step 3: Cook the BBQ Meatballs in Sauce

  1. In the same pan, add the minced onion and cook over medium heat until the onion becomes translucent.
  2. Add the browned meatballs back into the pan, then pour in the barbeque sauce. If the sauce appears too thick, you can add a bit of water (about 1/2 cup) to reach your desired consistency.
  3. Once the sauce begins to simmer, reduce the heat, cover the pan, and let the meatballs simmer gently for 15-20 minutes, allowing them to absorb all the smoky BBQ flavors.

Step 4: Serve the Dish
Serve the BBQ meatballs hot alongside the creamy mashed potatoes. You can also serve this dish with a side of steamed vegetables for a well-rounded meal.

Pro Tip:

For a festive touch, consider pairing your BBQ Meatballs with a refreshing Smoked Tofu and Grilled Vegetable Salad for a complete weekend dinner experience. Itโ€™s light, healthy, and adds a nice contrast to the richness of the meatballs and mashed potatoes.

Enjoy your hearty and flavorful BBQ Meatballs with Mashed Potatoes โ€“ a dinner that will make your weekends extra special!
