Ingredients:

  • 1 pound smoked sausage
  • 1/4 cup butter
  • 1/2 cup margarine
  • 1 green onion
  • 1 package frozen hash browns
  • 2 cups sour cream
  • 2 cups cheddar cheese

Instructions:

  1. Cut 1/2 pound of the smoked sausage into 1-inch pieces.
  2. Cut the remaining smoked sausage into thirds, slicing partially through. Set aside for garnish.
  3. In a skillet, melt the butter. Saute the green onion for about 3 minutes, or until tender.
  4. In a large mixing bowl, combine the sliced sausage, frozen hash browns, and sauteed onion. Mix well.
  5. Add the sour cream and 1 1/2 cups of cheddar cheese to the mixture, reserving 1/2 cup of cheese for later use.
  6. Spoon the mixture into an 11 x 7 x 2-inch baking dish.
  7. Top the mixture with the sliced sausage thirds.
  8. Sprinkle the reserved 1/2 cup of cheddar cheese around the border of the dish.
  9. Bake in a preheated oven at 350 degrees Fahrenheit for 30 to 35 minutes, until the cheese is melted and bubbly, and the dish is heated through.
