Enchiladas (Aka Mexican Stuff) 🌮🔥

Description: Fast, easy, and just plain yummy. Can be made ahead. For those people with tummies that can handle HOT, use hot sauce and salsa. Serve with chips and a blop of sour cream!

Ingredients:

Quantity Ingredient
Tortilla chips
1 1/2 lbs hamburger
1 onion
1 cup colby cheese
1 cup hot sauce
0.5 cup salsa
1 can beans

Instructions:

  1. Preheat and Prepare: Take a baking dish (I use an 9×9 pan) and crunch tortilla chips in the bottom, just to cover the bottom.

  2. Cook Hamburger: Brown hamburger, drain, return to skillet and add onion.

  3. Add Flavor: Brown a little more, add sauce, seasoning, and salsa.

  4. Simmer: Simmer for a couple of minutes.

  5. Layer it Up: Pour meat mixture over chips.

  6. Warm Beans: Heat beans in the microwave and spread over meat mixture.

  7. Cheese it Up: Shred cheese over the top (the more, the better).

  8. Bake: Put baking dish in the microwave for 5 minutes or in the oven at 350°F for 15 minutes.
