Spicy Chicken and Tofu Stew (Opor Ayam Pedes Campur Tahu)

Ingredients:

  • 4 pieces chicken
  • 1 block tofu
  • 7 shallots
  • 6 cloves garlic
  • 7 curly red chilies
  • 5 red bird’s eye chilies
  • 3 candlenuts
  • Ground pepper to taste
  • Ground coriander to taste
  • 1 finger-length piece of turmeric
  • 1 finger-length piece of ginger
  • Galangal (crushed)
  • Lemongrass (crushed)
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 coconut

Instructions:

  1. Prepare the Spice Paste:

    • In a food processor or mortar and pestle, grind together the shallots, garlic, red bird’s eye chilies, curly red chilies, turmeric, ginger, candlenuts, ground pepper, and ground coriander until a smooth paste forms.
  2. Sauté the Spice Paste:

    • Heat a generous amount of oil in a large pan over medium heat. Add the spice paste and sauté until fragrant.
  3. Add Aromatics:

    • Once the paste is aromatic, add the crushed galangal, crushed lemongrass, bay leaves, and kaffir lime leaves. Continue to sauté until the spices are well-blended and aromatic.
  4. Incorporate Coconut Milk:

    • Pour in the coconut milk and stir well. Season with sugar and salt to taste. Adjust the seasoning until it reaches your preferred balance of sweet and salty.
  5. Cook the Chicken:

    • Add the chicken pieces to the pan. Stir well to coat the chicken with the spice mixture. Cook for about 30 minutes, or until the chicken is tender and cooked through.
  6. Add the Tofu:

    • Cut the tofu into cubes and gently add it to the pan. Stir carefully to avoid breaking up the tofu. Simmer for another 10-15 minutes, allowing the tofu to absorb the flavors.
  7. Final Adjustments:

    • Allow the stew to cook for a total of 40-45 minutes, or until the chicken and tofu are tender and the flavors are well combined. Stir occasionally to ensure even cooking.
  8. Serve:
