Ayam Geprek: Spicy Indonesian Fried Chicken Delight

Ingredients:

  • Chicken, as needed
  • 2 small packets of Sajiku flour
  • 4 cloves of shallots
  • 3 cloves of garlic
  • A handful of chilies
  • Salt, to taste
  • MSG (vetsin), to taste
  • Sugar, to taste

Steps:

  1. Prepare and Fry the Chicken:

    • Coat the chicken thoroughly with Sajiku flour.
    • Fry the chicken until it turns a golden brown. Once done, remove from the oil and set aside.
  2. Prepare the Spices:

    • Fry the shallots until golden brown, then remove and set aside.
    • Fry the garlic until fragrant, then remove and set aside.
    • Turn off the heat and add the chilies to the hot oil briefly, then remove.
  3. Make the Spice Paste:

    • Using a mortar and pestle, grind the fried shallots, garlic, and chilies together.
    • Add salt, MSG, and sugar to taste, and continue to grind until well mixed. Taste and adjust seasoning if necessary.
  4. Combine and Serve:

    • Place the fried chicken into the mortar with the spice paste and crush the chicken to combine it with the spices.
    • Serve the ayam geprek hot, garnished with additional chilies if desired.
