Ingredients:

  • 1/2 cup butter
  • 1 cup margarine
  • 1 cup cream cheese
  • 1 cup all-purpose flour
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup green chilies, diced
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions:

  1. In a small mixing bowl, cream together the butter and cream cheese until smooth and well combined.

  2. Gradually add the all-purpose flour to the creamed mixture, beating until fully incorporated and a dough forms.

  3. Shape the dough into 24 equal-sized balls, cover them, and refrigerate for at least 1 hour to firm up.

  4. Preheat your oven to 350°F (175°C) and grease miniature muffin cups with cooking spray.

  5. Take each chilled dough ball and press it onto the bottom and up the sides of the greased muffin cups to form small tart shells.

  6. Sprinkle a rounded teaspoonful of shredded Monterey Jack cheese and 1/2 teaspoon of diced green chilies into each tart shell.

  7. In another bowl, beat the eggs together with the cream, salt, and pepper until well blended.

  8. Spoon the egg mixture into each prepared tart shell, filling them to the top.

  9. Bake the mini quiches in the preheated oven for 30-35 minutes, or until the crusts are golden brown and the filling is set.

  10. Remove the quiches from the oven and let them stand for 5 minutes before carefully removing them from the muffin cups.

  11. Serve the Mini Mexican Quiches warm as a delicious appetizer or snack.

  12. Refrigerate any leftovers promptly in an airtight container for future enjoyment.
