Spicy Indonesian Beef Liver Stir-Fry

Sambal Goreng Hati Sapi

Ingredients:

  • 300 grams of fresh beef liver
  • 5 large red chilies
  • 3 red curly chilies
  • 3 tablespoons cooking oil
  • 5 shallots
  • 3 cloves garlic
  • 2 candlenuts
  • 1 bay leaf, slightly crushed
  • 2 kaffir lime leaves, slightly crushed
  • 1 stalk lemongrass, bruised
  • 2 cm galangal, bruised
  • 2 tablespoons instant thick coconut milk
  • Salt, sugar, ground black pepper, and bouillon powder to taste
  • 1500 ml water

Instructions:

  1. Prepare the Beef Liver:

    • Clean the beef liver thoroughly and cut it into several pieces.
    • Boil in a pot of water for about 15 minutes until cooked.
    • Remove, cut into 1 cm cubes, and set aside.
  2. Blend the Ingredients:

    • In a blender, combine the red chilies, red curly chilies, candlenuts, shallots, and garlic. Blend until smooth.
  3. Cook the Spices:

    • Heat the cooking oil in a pan over medium heat.
    • Add the blended spice mixture and sauté until fragrant and slightly reddish.
  4. Add Aromatics:

    • Incorporate the bay leaf, kaffir lime leaves, galangal, and lemongrass into the pan. Stir well.
  5. Combine Ingredients:

    • Add the beef liver cubes to the pan. Cook until the liver starts to release more oil.
  6. Season and Simmer:

    • Season with sugar, salt, ground black pepper, bouillon powder, and stir in the coconut milk.
    • Add a little water if needed. Cook until the liquid reduces and the beef liver is tender and the spices are well absorbed, about 5 minutes.
  7. Serve:

    • Remove from heat and transfer to a serving dish.
    • This dish pairs wonderfully as a side with opor (Indonesian coconut curry) and can be complemented with petai (stink beans) if desired.
