Ingredients:

  • 1/2 kg chicken gizzards, cleaned and boiled for 8 minutes, then drained and sliced
  • 6 cloves garlic, thinly sliced
  • 8 shallots, thinly sliced
  • 1/2 ounce bird’s eye chilies or curly green chilies, thinly sliced
  • 2 bay leaves
  • 1 piece galangal, crushed
  • 1 piece ginger, crushed
  • 4 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon Saori oyster sauce
  • Sugar, to taste
  • Salt, to taste
  • Chicken seasoning powder (optional)
  • Cooking oil
  • Water, as needed

Steps:

  1. Begin by cleaning the chicken gizzards thoroughly. Boil them for about 8 minutes until cooked through. Drain and cut into bite-sized pieces.

  2. Heat some cooking oil in a pan. Sauté the garlic and shallots until fragrant.

  3. Add the sliced chilies, bay leaves, crushed galangal, and ginger. Sauté until the ingredients are wilted and aromatic.

  4. Introduce the sliced chicken gizzards into the pan. Stir in the Saori oyster sauce, sweet soy sauce, sugar, salt, and chicken seasoning powder if using. Pour in enough water to cover the ingredients.

  5. Allow the mixture to come to a boil. Taste and adjust the seasoning according to your preference.

  6. Once the sauce has reduced and thickened, give it a quick stir.
