Pepes Ikan Mas Recipe

Pepes Ikan Mas is a traditional Indonesian dish that features fish marinated in a blend of aromatic spices, wrapped in banana leaves, and steamed to perfection. This flavorful dish is a wonderful way to enjoy the fresh taste of fish combined with vibrant herbs and spices.

Ingredients:

  • 2 medium-sized tilapia fish
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 10 sprigs of basil leaves
  • 1 large tomato, chopped
  • 10 bird’s eye chilies
  • 2 scallions
  • Banana leaves for wrapping
Spice Paste:
  • 1 thumb-sized piece of turmeric, peeled and chopped
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 2 red chilies
  • 4 cloves garlic
  • 4 shallots
  • 4 candlenuts
  • 1 teaspoon ground coriander
  • Sugar, to taste
  • Salt, to taste

Instructions:

  1. Prepare the Fish:

    • Clean the tilapia fish thoroughly. Pat dry with paper towels.
    • Rub the fish with the prepared spice paste, ensuring that it is well coated. Set aside to marinate while you prepare the other ingredients.
  2. Prepare the Spice Paste:

    • In a food processor or mortar and pestle, combine the turmeric, ginger, red chilies, garlic, shallots, and candlenuts. Grind until you achieve a smooth paste.
    • Mix in the ground coriander, sugar, and salt to taste.
  3. Assemble the Pepes:

    • Place a few sprigs of basil, a couple of kaffir lime leaves, and pieces of chopped tomato inside the cavity of each fish.
    • Add the bruised lemongrass and additional kaffir lime leaves on top.
    • Wrap each fish securely in banana leaves, making sure the wrapping is tight to keep all the flavors in.
  4. Steam the Fish:

    • Arrange the wrapped fish in a steamer.
    • Steam over medium heat for about 1 hour, or until the fish is cooked through and infused with the aromatic spices.
  5. Serve:

    • Carefully unwrap the banana leaves and transfer the fish to a serving plate.
    • Garnish with extra basil leaves and serve with steamed rice or your favorite side dishes.
