Crispy Richeese Chicken with Fire Sauce & Cheese
Ingredients:
For Crispy Chicken Coating:
- 7 chicken wings
- All-purpose flour
- 1 egg, beaten
For Fire Sauce:
- 2 tbsp chili sauce
- 2 tbsp tomato sauce
- 3 tbsp barbecue sauce (Del Monte)
- 1 tsp sesame oil
- 1 tbsp oyster sauce
- 3 cloves garlic, crushed
- 1 tbsp chili flakes (Bon Cabe)
- 1 tsp sweet soy sauce (kecap manis)
For Cheese Sauce:
- 100 ml full cream UHT milk
- Grated cheddar cheese, to taste
- 1 tbsp cornstarch (dissolved in water)
- Margarine
Steps:
Preparing Crispy Chicken:
- Begin by thoroughly washing the chicken wings. For optimal tenderness, precook the chicken until fully done.
- Coat the chicken wings in beaten egg, then dip them into the all-purpose flour coating. For extra crispiness, repeat the dipping process twice.
- Deep fry the chicken wings until golden brown and crispy.
Making Fire Sauce:
- In a pan, sauté crushed garlic until fragrant and lightly browned.
- Add all the ingredients for the fire sauce: chili sauce, tomato sauce, barbecue sauce, sesame oil, oyster sauce, chili flakes, and sweet soy sauce.
- Stir well and bring the mixture to a boil. Simmer until the sauce thickens and reaches a desired consistency.
Preparing Cheese Sauce:
- Heat margarine in a saucepan over low heat.
- Pour in the UHT milk and add grated cheddar cheese according to your preference.
- Stir continuously until the cheese melts completely.
- Gradually add the cornstarch mixture while stirring, until the sauce thickens and reaches a smooth, creamy texture.
Assembling Crispy Richeese Chicken:
- Once the chicken wings are crispy and golden, toss them in the prepared fire sauce until well-coated.
- Serve the crispy chicken wings drizzled with the cheese sauce.
