Next, take a heavy-bottomed pan and dry roast the ingredients for the spice mix, which includes sesame seeds, garlic, cumin seeds, and coconut, one by one. Be sure to leave out the red chilli powder for now. Once roasted, grind the roasted ingredients into a fine powder using a mixer grinder and keep this aromatic spice mix aside.

In the same pan, heat the sunflower oil over medium flame. Once hot, add the mustard seeds and allow them to splutter, releasing their nutty aroma into the oil. Next, toss in the curry leaves, allowing them to crackle and infuse the oil with their fragrant essence.

Once the mustard seeds have spluttered, add the chopped green beans along with the turmeric powder. Sauté the mixture with the lid on until the beans are cooked to about 75%, which should take approximately 10 minutes.

After the beans are tender, stir in the prepared spice mix and season with salt to taste. Continue to sauté the beans, ensuring they are well-coated with the spices and cooked through. Once the beans are cooked to your desired tenderness, switch off the flame.
