Stir-Fried Shallots with Egg and Fried Anchovies

Ingredients:

  • 10 shallots, sliced thickly
  • 2 cloves garlic (optional)
  • 10 bird’s eye chilies
  • 1 teaspoon oyster sauce
  • Sugar, to taste
  • Salt, to taste
  • 2 eggs (beaten and cooked into a thin omelet, then shredded)
  • Fried anchovies (as needed)

Instructions:

  1. Prepare the Ingredients:

    • Slice the shallots thickly.
    • Thinly slice the garlic, if using.
    • Slice the bird’s eye chilies into thin rounds.
  2. Sauté the Aromatics:

    • Heat a pan with a bit of oil over medium heat.
    • Add the shallots, garlic (if using), and bird’s eye chilies.
    • Sauté until the shallots become translucent and fragrant.
