Spicy Shredded Smoked Tuna (Oil-Free)

Ingredients:

  • 1 kg smoked tuna (3 medium-sized smoked tuna)
  • 1 thumb-sized piece of galangal, smashed
  • 3/4 thumb-sized piece of ginger, smashed
  • 2 stalks of lemongrass, white part only, smashed
  • 3 kaffir lime leaves, torn
  • Sugar, salt, and ground coriander to taste
  • Water

Spice Paste:

  • 10 shallots
  • 4 cloves of garlic
  • 19 bird’s eye chilies
  • 9 red curly chilies
  • 2 small tomatoes

Instructions:

  1. Prepare the Tuna: Shred the smoked tuna, discarding the head and bones. Set aside.
  2. Make the Spice Paste: Blend the shallots, garlic, bird’s eye chilies, curly chilies, and tomatoes with some water until smooth.
  3. Cook the Spice Paste: Pour the blended spice paste into a pan and sauté until fragrant and cooked through.
  4. Add Aromatics: Add the galangal, ginger, lemongrass, and kaffir lime leaves to the pan. Stir well.
  5. Combine with Tuna: Add the shredded tuna to the pan along with a bit more water.
  6. Season: Add sugar, salt, and ground coriander to taste. Mix well and adjust seasoning if needed.
  7. Simmer: Lower the heat and let the mixture simmer until the water evaporates. Once the water has evaporated, turn off the heat and serve.
