Spicy Oatmeal Raisin Cookies

Overview:

Delicately flavored with herbs and spices, the uniqueness of these cookies intrigues all. This recipe is from the cookbook “How It All Vegan.” Perfect for dessert or a quick snack, these vegan-friendly cookies are sure to please both kids and adults alike. They’re quick to make, requiring just under 30 minutes from start to finish.

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: 12 small cookies

Ingredients:

  • 3 cups rolled oats
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon pepper
  • 1 teaspoon cayenne pepper
  • 1 mashed banana
  • 1 cup dry sweetener
  • 1/2 cup oil
  • 1 cup soymilk
  • 2 cups raisins
  • 1 cup chocolate chips or carob chips

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Combine the rolled oats, flour, salt, baking soda, cinnamon, nutmeg, ginger, cumin, cardamom, pepper, and cayenne in a large bowl. Stir well to ensure even distribution of the dry ingredients.
  3. Add the mashed banana, dry sweetener, oil, soymilk, raisins, and chocolate chips to the oat mixture. Gently mix everything together until just combined. Be careful not to overmix, as this can result in tough cookies.
  4. Scoop spoon-sized portions of the dough onto a lightly oiled cookie sheet, spacing them a few inches apart to allow for spreading during baking.
  5. Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly golden brown around the edges.
  6. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • Feel free to customize the add-ins based on your preferences. Swap out the raisins for dried cranberries or chopped nuts, or use a combination of different types of chocolate chips for added variety.
  • Store any leftover cookies in an airtight container at room temperature for up to a week. They also freeze well for longer storage. Just be sure to thaw them completely before serving.
