Ingredients:
- 5 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups shortening
- 1 egg
- 1 tablespoon vinegar
- 3/4 cup water
- 2 cups fresh blueberries
- 2 cups frozen blueberries
- 2 cups raspberries
- 2 cups strawberries
- 4 cups fresh rhubarb
- 2 cups frozen rhubarb
- 2 baking apples, peeled and sliced
- 2/3 cup sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1-2 egg yolks (for brushing)
Instructions:
- In a large bowl, combine the all-purpose flour and salt.
- Cut in the shortening until the mixture becomes crumbly.
- In a separate bowl, whisk together the egg, vinegar, and water.
- Sprinkle the egg mixture over the dry ingredients and toss gently until incorporated. If the dough seems too dry, gradually add more water, one tablespoon at a time, until a dough ball can be formed.
- Divide the dough into 4 equal balls, then cover and chill in the refrigerator for 30 minutes.
- Preheat your oven to 350°F (175°C).
- On a lightly floured surface, roll out two of the dough balls to fit two 9-inch pie pans.
- In a large mixing bowl, combine the fresh and frozen berries, rhubarb, sliced apples, sugar, all-purpose flour, lemon juice, and water to make the filling. Ensure the fruit is partially thawed if using frozen berries.
- Spoon the filling mixture evenly into the prepared pie crusts.
- Roll out the remaining two dough balls and place them over the fruit filling.
- Seal and flute the edges of the pies to secure the filling inside.
- In a small bowl, beat the egg yolks with water to create an egg wash.
- Brush the egg wash over the tops of the pies for a golden finish.
- Using a sharp knife, make several small slits in the top crusts to allow steam to escape during baking.
- Place the pies in the preheated oven and bake for 50 to 60 minutes, or until the crust is golden brown and the filling is bubbly.
- Once baked to perfection, remove the pies from the oven and allow them to cool slightly before serving.
