Ingredients:

  • 5 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups shortening
  • 1 egg
  • 1 tablespoon vinegar
  • 3/4 cup water
  • 2 cups fresh blueberries
  • 2 cups frozen blueberries
  • 2 cups raspberries
  • 2 cups strawberries
  • 4 cups fresh rhubarb
  • 2 cups frozen rhubarb
  • 2 baking apples, peeled and sliced
  • 2/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1-2 egg yolks (for brushing)

Instructions:

  1. In a large bowl, combine the all-purpose flour and salt.
  2. Cut in the shortening until the mixture becomes crumbly.
  3. In a separate bowl, whisk together the egg, vinegar, and water.
  4. Sprinkle the egg mixture over the dry ingredients and toss gently until incorporated. If the dough seems too dry, gradually add more water, one tablespoon at a time, until a dough ball can be formed.
  5. Divide the dough into 4 equal balls, then cover and chill in the refrigerator for 30 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. On a lightly floured surface, roll out two of the dough balls to fit two 9-inch pie pans.
  8. In a large mixing bowl, combine the fresh and frozen berries, rhubarb, sliced apples, sugar, all-purpose flour, lemon juice, and water to make the filling. Ensure the fruit is partially thawed if using frozen berries.
  9. Spoon the filling mixture evenly into the prepared pie crusts.
  10. Roll out the remaining two dough balls and place them over the fruit filling.
  11. Seal and flute the edges of the pies to secure the filling inside.
  12. In a small bowl, beat the egg yolks with water to create an egg wash.
  13. Brush the egg wash over the tops of the pies for a golden finish.
  14. Using a sharp knife, make several small slits in the top crusts to allow steam to escape during baking.
  15. Place the pies in the preheated oven and bake for 50 to 60 minutes, or until the crust is golden brown and the filling is bubbly.
  16. Once baked to perfection, remove the pies from the oven and allow them to cool slightly before serving.

Serve and Enjoy!
Slice into wedges and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for a delightful treat that captures the essence of summer in every bite. Whether enjoyed at a family gathering, potluck, or picnic, our Company Bumbleberry Pie is sure to become a beloved favorite among friends and family alike.
