Grilled Kembung with Sweet Soy Glaze

Ingredients:

  • 2 mackerel (kembung banjar), cleaned
  • 1 ripe tomato
  • 2 shallots
  • 10 green bird’s eye chilies
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon cooking oil
  • 1 teaspoon salt
  • Juice of 1/2 lime

Instructions:

  1. Prepare the Fish: Clean the mackerel thoroughly, then rub it with salt and lime juice. Let it marinate for 10 minutes to infuse the flavors.

  2. Make the Sauce: In a bowl, combine the sliced shallots, chopped tomato, and sliced green chilies. Add the sweet soy sauce and mix well to combine all the flavors.

  3. Preheat the Grill: Heat your grilling pan (a Happy Call pan works well for this) and brush it with cooking oil to prevent sticking.

  4. Grill the Fish: Place the marinated mackerel on the grill. Cook for about 10 minutes, turning occasionally to ensure even grilling on both sides.

  5. Serve: Once the fish is cooked through and has a nice char, remove it from the grill. Serve hot, topped with the prepared sweet soy glaze.

This simple yet flavorful grilled mackerel dish, seasoned with a tangy sweet soy glaze, is perfect for a quick meal or a delightful addition to your dinner table. Enjoy the delicious combination of tender fish and spicy-sweet sauce!
