| 1 cup | Mashed bananas | 
| 1 | Lime (juiced) | 
| Confectioners’ sugar | 
Instructions:
- 
Preheat your oven to 350°F. 
- 
Prepare a loaf pan by spraying it with cooking spray. 
- 
Combine flour, baking powder, and salt in a bowl. Mix well and set aside. 
- 
In a large bowl, beat together sugar and butter until creamy. 
- 
Add eggs to the sugar-butter mixture and beat well until fully incorporated. 
- 
Mix in mashed bananas, yogurt, vanilla extract, and dark rum. Beat well. 
- 
Gradually add the flour mixture to the wet ingredients, stirring until just combined. 
- 
Stir in 1/2 cup of sweetened flaked coconut into the batter.

Pour the batter into the prepared loaf pan, spreading it evenly.

Sprinkle 1 tablespoon of sweetened flaked coconut over the top of the batter.

Bake for about 1 hour or until a toothpick inserted into the center comes out clean.

After 10 minutes, transfer the bread to a wire rack to cool completely.

While the bread is cooling, prepare the glaze by combining confectioners’ sugar and lime juice in a small bowl.

Once the bread is completely cooled, drizzle the glaze over the top of the bread.
