Turkey and Guacamole Piadina Recipe

Avocado | 600g |

Fresh parsley | 1 bunch |

Instructions:

Prepare the Guacamole:
- Cut the avocado in half and remove the pit. Peel it, then place the avocado in a bowl.
- Finely chop the onion and fresh chili pepper.
- Squeeze the lime juice into the bowl with the avocado, and mash everything with a fork until you achieve a smooth puree.
- Add the chopped onion, chili, and fresh parsley. Season with salt and mix well using a spatula.

Cook the Turkey:
- Heat a little olive oil in a pan over medium heat.
- Add the turkey slices and cook until golden brown on one side, then flip to cook the other side until browned.

Prepare the Piadina:
- Heat the first piadina for 30 seconds on each side on a hot skillet, then transfer it to a cutting board.
- Spread half of the guacamole mixture on one half of the piadina.
- Top with half of the turkey slices. Season with salt and drizzle with a bit of extra virgin olive oil.
- Fold the piadina in half to enclose the filling.
