Indonesian Ayam RW (Chicken RW)
Ingredients:
- 1 whole chicken, cut into small pieces
- Accompaniments:
- 2 bay leaves
- 7 kaffir lime leaves
- 1 turmeric leaf
- 1 pandan leaf
- Sugar, salt, and water to taste
- Spice Paste:
- 10 shallots
- 3 cloves garlic
- 5 large red chilies (add bird’s eye chilies for extra spiciness if desired)
- 2 stalks lemongrass, white part only
- 1 piece ginger
- 2 pieces galangal
- 2 pieces turmeric
- Additional Ingredients:
- Fresh basil leaves
- Spring onions
Instructions:
- Heat some oil in a pan and sauté the spice paste until fragrant.
- Add the accompaniments (bay leaves, kaffir lime leaves, turmeric leaf, pandan leaf) and stir fry for a moment.
- Add the chicken pieces and stir until the chicken changes color.
- Pour in enough water to cover the chicken. Cook until the chicken is tender, and the liquid reduces. Adjust seasoning to taste.
- Finally, add fresh basil leaves and spring onions.
- Serve hot and enjoy!
