Turmeric Infused Indonesian Chicken Stew

Indonesian Ayam RW (Chicken RW)

Ingredients:

  • 1 whole chicken, cut into small pieces
  • Accompaniments:
    • 2 bay leaves
    • 7 kaffir lime leaves
    • 1 turmeric leaf
    • 1 pandan leaf
    • Sugar, salt, and water to taste
  • Spice Paste:
    • 10 shallots
    • 3 cloves garlic
    • 5 large red chilies (add bird’s eye chilies for extra spiciness if desired)
    • 2 stalks lemongrass, white part only
    • 1 piece ginger
    • 2 pieces galangal
    • 2 pieces turmeric
  • Additional Ingredients:
    • Fresh basil leaves
    • Spring onions

Instructions:

  1. Heat some oil in a pan and sauté the spice paste until fragrant.
  2. Add the accompaniments (bay leaves, kaffir lime leaves, turmeric leaf, pandan leaf) and stir fry for a moment.
  3. Add the chicken pieces and stir until the chicken changes color.
  4. Pour in enough water to cover the chicken. Cook until the chicken is tender, and the liquid reduces. Adjust seasoning to taste.
  5. Finally, add fresh basil leaves and spring onions.
  6. Serve hot and enjoy!
