Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C).

  2. Prepare dry ingredients: In a medium bowl, combine the all-purpose flour, ground ginger, baking soda, cinnamon, salt, and optionally ground black pepper.

  3. Beat shortening and sugar: In a large bowl, using a mixer at medium speed, beat the vegetable shortening and 1/2 cup of sugar until the mixture becomes light and fluffy.

  4. Add egg and molasses: Beat in the egg until blended, then add the dark molasses and continue beating until well incorporated.

  5. Incorporate dry ingredients: Reduce the mixer speed to low and gradually beat in the flour mixture until just blended. Be careful not to overmix.

  6. Prepare sugar coating: Place the remaining 2 tablespoons of sugar on a piece of waxed paper.

  7. Shape dough into balls: Roll 1/4 cup of dough into a ball, then roll it in the sugar to coat evenly. Repeat this process for the remaining dough, forming 10 balls.

  8. Arrange on baking sheet: Place the dough balls 3 inches apart on an ungreased cookie sheet. If you prefer smaller cookies, roll the dough into slightly rounded tablespoons and place them 2 inches apart on two ungreased cookie sheets.

  9. Bake: Bake the cookies in the preheated oven until set, about 15 minutes for larger cookies or 9 to 11 minutes for smaller ones. The cookies will be very soft and may appear moist in the cracks.

  10. Cool: Allow the cookies to cool on the cookie sheets for 1 minute, then transfer them to wire racks to cool completely.
