Fresh Blueberry Pie Recipe

Ingredients:

  • 4 cups fresh blueberries
  • 1/2 cup water
  • 1/2 cup cornstarch
  • 1 cup sugar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1 pie crust (homemade or store-bought)

Instructions:

1 Preheat oven to 425°F (220°C). 20 minutes
2 Line pie crust with parchment paper and fill with dried beans or rice to weigh it down.

4 Remove from oven, take out the parchment paper and beans, then prick the bottom of the crust with a fork. Return to oven and bake until golden brown.
5 Let the crust cool on a rack for 2 minutes. 2 minutes
6 Brush the entire crust with egg white to seal it.
7 In a medium saucepan, combine 1 cup of the softest blueberries with 1/2 cup of water. Cover and bring to a boil.
8 In a small bowl, whisk together the cornstarch with 2 tablespoons of water until well blended. Set aside.
9 When the blueberries and water come to a boil, lower the heat to simmer and stir constantly for 3-4 minutes until the berries start to burst and the juices start to thicken.
10 While still stirring, slowly add the cornstarch mixture, sugar, lemon juice, and salt.
11 Simmer for a minute or so until the mixture becomes translucent.
12 Remove from heat and gently stir in the remaining blueberries.
13 Spoon the blueberry filling into the prepared pie crust.
14 Let the pie sit at room temperature for at least 2 hours before serving with whipped cream. 2 hours
15 Store the pie at room temperature for up to 2 days.
