Instructions:

Preparation:
- Place the sirloin tip roast in the refrigerator a couple of days ahead of time.
- Set the roast at room temperature for 1 hour prior to cooking.
- Thoroughly rinse the roast and pat dry with paper towels.

- Generously salt and pepper the roast on all sides.

Searing:
- Cover the bottom of a roasting pan with olive oil and set it on medium-high heat for about 4 minutes until very hot.
- Wearing a long-sleeve shirt and oven gloves, carefully place the roast into the hot roasting pan and sear on all sides until nicely browned. This should take about 6 to 8 minutes.

- Set a wire rack in another roasting pan and place the seared roast onto the rack.
- Pour water over the roast, ensuring it covers the bottom of the roasting pan, then pour the red wine over the roast.
