Ingredients:

  • 3 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 can (15 ounces) solid pack pumpkin
  • 3 cups all-purpose flour
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350ºF (175ºC).
  2. Prepare two 9x5x3″ loaf pans by buttering and flouring them.
  3. In a large bowl, beat together the sugar and vegetable oil until well blended.
  4. Mix in the eggs and solid pack pumpkin until fully incorporated.
  5. In another large bowl, sift together the all-purpose flour, ground cloves, ground cinnamon, ground nutmeg, baking soda, salt, and baking powder.
  6. Gradually stir the dry ingredients into the pumpkin mixture, adding them in two additions until just combined.
  7. If desired, mix in the chopped walnuts for added texture and flavor.
  8. Divide the batter equally between the prepared loaf pans.
  9. Bake in the preheated oven until a tester inserted into the center comes out clean, about 1 hour and 10 minutes.
  10. Transfer the baked loaves to wire racks and let them cool for 10 minutes.
  11. Using a sharp knife, gently loosen the edges of the loaves from the pans.
  12. Turn the loaves out onto the wire racks and allow them to cool completely.
