Ingredients:
- 1 cup dark brown sugar
- 1/4 cup butter
- 1/2 cup margarine
- 1/4 cup applesauce
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1/2 cup walnuts
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease cookie sheets with cooking spray.
- Beat together the dark brown sugar and butter until well blended.
- Add applesauce and egg to the sugar and butter mixture, and beat until thoroughly combined.
- In a separate small bowl, combine flour, oats, baking soda, cinnamon, and salt.
- Gradually add the flour mixture to the sugar/butter mixture, beating until fully blended.
- Stir in raisins, walnuts, and vanilla extract until evenly distributed throughout the dough.
- Using a measuring tablespoon, drop 3 level tablespoons of dough onto the prepared cookie sheets, leaving about 2 inches of space between each cookie.
- Gently flatten each dough mound slightly with the back of a spoon or your fingers.
- Bake in the preheated oven at 350°F (175°C) for 10-15 minutes or until the cookies are golden brown around the edges.
