Ingredients

Dough:

  • 1 packet dry yeast
  • 1/4 cup warm water
  • 2 large eggs
  • 1 cup granulated sugar, divided
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, plus 6 tablespoons for brushing
  • 1 teaspoon salt
  • 2 3/4 to 3 1/4 cups all-purpose flour
  • 1 cup flaked coconut
  • 1 tablespoon finely grated orange zest

Filling and Glaze:

  • 1/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter
  • 1/4 cup freshly squeezed orange juice

Instructions

1. Prepare the Dough:

  • In a large mixing bowl, soften the yeast in the warm water. Allow it to sit for about 5 minutes until it becomes frothy.
  • Stir in the eggs, 1/4 cup of sugar, sour cream, 6 tablespoons of butter, and salt, mixing until well combined.
  • Gradually add 2 3/4 cups of flour, stirring until a dough begins to form. If the dough is too sticky, add more flour, a little at a time, until it becomes a moderately soft dough.
  • Turn the dough out onto a floured surface and knead for about 5 minutes, or until it becomes smooth and elastic.
  • Place the dough in a greased bowl, turning it so the greased side is up. Cover with a clean cloth and let it rise in a warm place for approximately 1 to 1 1/2 hours, or until doubled in size.

2. Shape the Coffee Cake:

  • Punch down the risen dough and turn it out onto a floured surface. Divide the dough into two equal portions.
  • Shape each portion into a ball and cover with a cloth. Let them rest for 10 minutes.
  • Roll each dough ball into a 12-inch circle on a floured surface. Brush each circle with 1 tablespoon of the remaining butter.
  • In a small bowl, combine the remaining 3/4 cup of sugar, 1 cup of coconut, and orange zest. Sprinkle this mixture evenly over the dough circles.
