Butter-Orange-Coconut Coffee Cake

Ingredients
Dough:
- 1 packet dry yeast
- 1/4 cup warm water
- 2 large eggs
- 1 cup granulated sugar, divided
- 1/2 cup sour cream
- 1/2 cup unsalted butter, plus 6 tablespoons for brushing
- 1 teaspoon salt
- 2 3/4 to 3 1/4 cups all-purpose flour
- 1 cup flaked coconut
- 1 tablespoon finely grated orange zest
Filling and Glaze:
- 1/4 cup granulated sugar
- 1/2 cup sour cream
- 1/4 cup unsalted butter
- 1/4 cup freshly squeezed orange juice
Instructions
1. Prepare the Dough:
- In a large mixing bowl, soften the yeast in the warm water. Allow it to sit for about 5 minutes until it becomes frothy.
- Stir in the eggs, 1/4 cup of sugar, sour cream, 6 tablespoons of butter, and salt, mixing until well combined.
- Gradually add 2 3/4 cups of flour, stirring until a dough begins to form. If the dough is too sticky, add more flour, a little at a time, until it becomes a moderately soft dough.
- Turn the dough out onto a floured surface and knead for about 5 minutes, or until it becomes smooth and elastic.
- Place the dough in a greased bowl, turning it so the greased side is up. Cover with a clean cloth and let it rise in a warm place for approximately 1 to 1 1/2 hours, or until doubled in size.
2. Shape the Coffee Cake:
- Punch down the risen dough and turn it out onto a floured surface. Divide the dough into two equal portions.
- Shape each portion into a ball and cover with a cloth. Let them rest for 10 minutes.
- Roll each dough ball into a 12-inch circle on a floured surface. Brush each circle with 1 tablespoon of the remaining butter.
- In a small bowl, combine the remaining 3/4 cup of sugar, 1 cup of coconut, and orange zest. Sprinkle this mixture evenly over the dough circles.
