Instructions:

    • Simmer the mixture over medium heat until the tomatoes are soft. Set aside.

    • In a mixing bowl, whisk together 3 eggs, 3/4 cup of milk, and 1 cup of small curd cottage cheese until well combined.
  4. Assemble Quiche:
