Anna Banana’s Birthday Cake With Chocolate Fudge Icing 🎂🍫

Description: Everyone calls my daughter Anna Banana, and she happens to adore bananas! I made this cake in the shape of a heart. I wrote Happy Birthday in bright yellow on the chocolate fudge icing and made little perfect marzipan bananas for decorations.

Ingredients:

Granulated sugar 3/4 cup
Eggs 2
Pure vanilla extract 1 tsp
Bananas 3, mashed
All-purpose flour 2 cups
Baking soda 1 tsp
Sour cream 1/4 cup
Bittersweet chocolate 4 oz
Milk 2 tbsp
Unsalted butter (for icing) 1/3 cup
Icing sugar 1/4 cup
Pure vanilla extract (for icing) 1 1/2 tsp

Instructions:

  1. Preheat the oven to 350°F.

  2. Prepare a 9-inch springform pan (or heart-shaped pan) by buttering it.

  3. Cream 1/2 cup of unsalted butter until light and fluffy.

  4. Gradually beat in the granulated sugar until well combined.

  5. Add the eggs one at a time, beating well after each addition.

  6. Beat in 1 teaspoon of pure vanilla extract and the mashed bananas until smooth.

  7. Sift or mix together the all-purpose flour and baking soda. Add them to the batter alternately with the sour cream, mixing until just combined.

  8. Spoon the batter into the prepared pan, spreading it evenly.

  9. Bake for 30 to 40 minutes, or until the cake springs back when gently pressed in the center.

  10. Cool the cake in the pan for 10 minutes, then invert it onto a wire rack to cool completely.

  11. For the icing, melt the bittersweet chocolate, 1/3 cup of unsalted butter, and milk in the top of a double boiler, stirring until smooth.

  12. Allow the chocolate mixture to cool slightly, then beat in the icing sugar and 1 1/2 teaspoons of pure vanilla extract until smooth.

  13. Place the bowl over a larger bowl of ice and water, stirring until the icing is thick and spreadable.

  14. Ice the cooled cake with the chocolate fudge icing, spreading it evenly over the top and sides.

  15. Decorate the cake as desired. You can write “Happy Birthday” on the icing and use marzipan bananas for decoration.
