Ingredients:

Quantity Ingredient
4 Boneless skinless chicken breast halves
1 Green chilies
2 Monterey Jack cheese
1/4 cup Parmesan cheese
2 tsp Chili powder
3 1/2 tsp Salt
1/4 tsp Ground cumin
1/4 cup Butter
1/8 cup Margarine
4 cups Cold water
1 Cornstarch
1 tsp Chicken bouillon granules

Instructions:

  1. Prepare Chicken:

    • Pound the chicken breasts to 1/4-inch thickness.
    • Place about 2 tablespoons of chopped green chilies and one strip of Monterey Jack cheese on the long end of each chicken breast.
    • Fold in the sides and ends of the chicken and secure with toothpicks to create neat rolls.
  2. Coat Chicken:

    • In a shallow bowl, combine bread crumbs, Parmesan cheese, chili powder, salt, and ground cumin.
    • Dip each chicken roll in 3 tablespoons of melted butter, then roll in the crumb mixture until evenly coated.
  3. Chill Chicken:

    • Place the coated chicken rolls, seam side down, in an ungreased 11x7x2-inch baking pan.
    • Drizzle the remaining melted butter over the chicken rolls.
    • Cover the pan and refrigerate for at least 4 hours to allow the flavors to meld and the coating to set.
  4. Bake Chicken:

    • Preheat your oven to 400°F (200°C).
    • Uncover the baking pan and bake the chicken rolls for 20-25 minutes, or until the chicken is cooked through and tender.
  5. Prepare Sauce:

    • While the chicken is baking, prepare the sauce by combining picante sauce, cold water, cornstarch, and chicken bouillon granules in a small saucepan.
    • Bring the mixture to a boil over medium heat, stirring constantly, and cook for 1 minute until the sauce thickens.
  6. Serve:

    • Once the chicken is done, remove the toothpicks and serve the Mexican-style Chicken Kiev hot, accompanied by the flavorful sauce.
