Instructions:

  1. Prepare Herbed Butter:

    • In a small bowl, combine 4 tablespoons of butter or margarine with minced garlic, dried oregano, chopped parsley, salt, and pepper. Set aside.
  2. Prepare Chicken Breasts:

    • Place each chicken breast between two sheets of plastic wrap and gently pound with a mallet until about 1/4 inch thick.
    • Spread 1 tablespoon of the prepared herbed butter in the center of each chicken breast.
  3. Stuff Chicken Breasts:

    • Place 4 tablespoons of shredded Monterey Jack cheese on top of the herbed butter on each chicken breast.
    • Carefully roll up the chicken breasts, folding over the sides as you roll to create a tight bundle. Secure with toothpicks if necessary.
  4. Coat with Breadcrumbs:

    • Melt the remaining 1/3 cup of butter or margarine in a small bowl.
    • Dip each chicken bundle into the melted butter, then roll in a mixture of breadcrumbs, grated Parmesan cheese, and cayenne pepper.
  5. Chill and Bake:

    • Place the chicken bundles seam side down on a baking dish.
    • Cover with foil and refrigerate for at least 4 hours, or preferably overnight.
    • Preheat your oven to 350°F (175°C).
    • Bake the chicken Kiev for 35-45 minutes, or until the chicken is cooked through. To check for doneness, cut into one of the chicken bundles with a knife, being careful not to cut into the cheese filling.
  6. Serve and Enjoy:

    • Once cooked, remove the toothpicks from the chicken bundles.
    • Serve hot, alongside your favorite side dishes such as broccoli rice au gratin, crusty French bread, and a green salad.

Cook’s Tips:

  • For an extra crispy crust, you can repeat the dipping and coating process with the breadcrumbs.
  • Be sure to remove all toothpicks before serving to avoid any accidents.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
