Hominy Cheese Casserole Recipe

Description: I love hominy, but many people these days don’t seem to even know what it is, and often a lot of folks think they don’t like it. Well, after they taste it served this way, there’s a very good chance they’ll change their minds. 😋

Ingredients:

  • 16 oz yellow hominy
  • 1 can white hominy
  • 1 can Ro-Tel tomatoes
  • 1 can green chilies
  • 1 1/2 cups shredded cheddar cheese
  • 2 tsp ground cumin
  • 1/4 – 1/2 cup crushed corn chips
  • 1/2 cup crushed corn chips (for topping)

Instructions:
