Instructions

  1. Heat oil: In a large soup pot, heat the olive oil over medium heat.
  2. Cook onions and celery: Add the onions and celery to the pot and cook until they are tender.
  3. Add cauliflower and broccoli: Toss in the cauliflower and broccoli florets, and cook for about five minutes, stirring occasionally.
  4. Season: Season with salt and pepper to taste.
  5. Add broth: Pour in three cans of broth and let the mixture simmer for 15 minutes, or until the vegetables are cooked through. Do not cover the pot during this step to prevent the cauliflower from developing a strong “cabbagey” smell.
  6. Mash vegetables: Once the vegetables are tender, use a potato masher to gently mash them into smaller pieces.
  7. Add thyme and remaining ingredients: Stir in thyme, the last can of broth, and one can of evaporated milk.
  8. Adjust richness: If desired, make the soup richer by omitting the last can of broth and adding two cans of evaporated milk instead. Be careful not to let the soup boil if you choose this option. Treat it as you would any cream soup, stew, or chowder.

This soup is a perfect balance of comfort and nutrition, making it a go-to recipe for chilly evenings or whenever you need a quick and satisfying meal. Enjoy its creamy texture and hearty flavor!
