This Easy Lamb Curry recipe brings together tender lamb, aromatic spices, and creamy coconut milk for a dish that’s bursting with flavor and warmth.

Ingredients:

Quantity Ingredient
600g Lamb fillets
2 cloves Garlic
1 inch Fresh ginger
To taste Salt
1 Green chili
150g Plain yogurt
2 Onions
250g Cashew nuts
1/2 tsp Ground coriander
1/2 tsp Ground cumin
1/2 tsp Garam masala
1/2 cup Coconut milk
3 tbsp Olive oil

Instructions:

  1. Prepare Marinade:

    • In a bowl, mix together the minced garlic, grated ginger, and salt.
    • Add in the plain yogurt and finely chopped green chili. Mix well.
    • Cut the lamb fillets into bite-sized pieces and coat them with the marinade.
    • Let the lamb marinate for 15 minutes to absorb the flavors.
  2. Prepare Nut Paste:

    • Meanwhile, blitz the cashew nuts in a food processor until they are ground to a smooth paste. Set aside.
  3. Sauté Onions:

    • Heat olive oil in a large frying pan or wok over medium heat.

  4. Add Spices and Lamb:

    • Once the onions are caramelized, add ground coriander, ground cumin, and garam masala to the pan. Stir well to combine.

  5. Cook Lamb:

    • Pour in any remaining marinade along with a splash of meat stock.

  6. Finish with Nut Paste and Coconut Milk:
