Creamless Broccoli Soup Recipe

Description:

You will never miss the cream in this soup. It is a filling vegan recipe anyone would enjoy. Found in one of my favorite Moosewood cookbooks.

Ingredients:

  • 1 tablespoon canola oil
  • 2 onions
  • 1/4 cup celery
  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 2 heads of broccoli
  • 4 1/2 cups water or vegetable stock
  • 1/3 cup quick-cooking oatmeal
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • Fresh chives for garnish
  • Lemon slices for garnish

Instructions:

  1. Prepare the Base:

    • In a soup pot, combine canola oil, chopped onions, celery, minced garlic, and salt.
    • Cook covered on medium heat for 10 minutes, stirring often to prevent sticking.
  2. Prep the Broccoli:

    • Rinse the broccoli thoroughly.
    • Cut into 4-5 cups of florets, and peel and chop the stems to make about 2 cups.
    • Reserve 1 cup of florets for later use.
  3. Cook the Broccoli:

    • When the onions are clear, add 4 cups of water or vegetable stock and all the broccoli except for the reserved florets.
    • Cover and bring to a boil, then lower the heat and simmer for 5 minutes.
  4. Add Oatmeal:

    • Add the quick-cooking oatmeal and simmer gently for about 10 minutes, stirring often, until the broccoli is tender and the soup begins to thicken.
  5. Season the Soup:

    • Remove from the heat and stir in fresh lemon juice, dried dill, and black pepper.
  6. Puree the Soup:

    • Working in batches, puree the soup until smooth. A blender is preferred for this step to achieve a creamy texture.
  7. Cook the Reserved Florets:

    • Bring the remaining 1/2 cup of water to a boil in a small saucepan.
    • Add the reserved broccoli florets and cook, covered, until they are bright green and crisp-tender, about 3-5 minutes.
  8. Combine and Garnish:

    • Stir the cooked florets and their cooking water into the pureed soup.
    • Garnish the soup with lemon slices and fresh chives, if desired.
  9. Serve:

    • Ladle the creamless broccoli soup into bowls and serve hot.
