Ingredients:

  • 1 cup flour
  • 1 cup beer
  • Paprika (to taste)
  • 1 block firm tofu
  • Malt vinegar
  • Potatoes

Instructions:

  1. Prepare the Tofu:

    • Begin a couple of hours before you plan to eat, or preferably the day before. Drain the tofu and place it between a couple of sheets of paper towels.
    • Add weight on top, such as a large book, to press out excess moisture, allowing the tofu to absorb the malt vinegar better. Let it sit for about an hour.
    • Transfer the tofu to a bowl of malt vinegar, ensuring it’s well submerged. Marinate in the fridge, ideally overnight.
  2. Prepare the Batter:

    • In a mixing bowl, combine equal parts of flour and beer along with paprika to taste. Stir until you achieve a smooth consistency.
  3. Preheat Oil:

    • Pour a generous amount of oil into a deep pan or wok, approximately 2 inches deep. Heat over a medium-high flame until hot.
  4. Prepare Potatoes:

    • While the oil heats, cook your chips according to your preferred method. Once cooked, keep them warm in the oven.
  5. Prepare Tofu for Frying:

    • Remove the marinated tofu from the fridge and pat it dry with paper towels. Cut it lengthwise into bars, approximately 2 inches wide.
  6. Fry the Tofu:

    • Once the oil is hot, carefully dip each tofu bar into the batter, ensuring they are thoroughly coated.
    • Gently place the battered tofu bars into the hot oil, frying them until they turn a crisp golden brown. Take care not to overcrowd the pan.
    • Fry in batches if necessary, ensuring there’s ample space between each piece to prevent sticking together.
  7. Drain and Serve:

    • Once fried, remove the tofu bars from the oil and place them on a paper towel-lined plate to drain any excess oil.
    • Serve the crispy tofu alongside the prepared chips immediately.
