Ingredients:

  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/3 cup dried cranberries
  • 1/3 cup dried apricots

  • 2 tsp vanilla extract
  • Zest of 1 orange

Instructions:

Step Description
1 Mix flour and baking powder together; set aside.
2 In a separate bowl, whisk together eggs, sugar, butter, vanilla, and grated orange rind.
3 Add almonds, cranberries, and apricots to the wet mixture.
4 Gradually add the flour mixture to the wet mixture, stirring until well combined. The dough will be sticky.
5 Transfer the dough onto a lightly floured work surface.
6 Divide the dough into two equal pieces.
7 Flour your hands and roll one piece into a log almost the length of your cookie sheet.
8 Place the log on the cookie sheet and flatten it to about ½ inch thickness. Repeat with the second piece of dough.
9 Bake at 350°F (175°C) for 20 minutes.
10 Remove from the oven and let rest for 5 minutes.
11 Transfer the logs to a cutting board and cut diagonally into ¾ inch slices.
12 Stand the cookies on their side and return them to a 300°F (150°C) oven for 10 minutes.
13 Remove from the oven and flip each cookie onto the other side.
14 Bake for another 10 minutes.
15 Let the biscotti cool on a wire rack.
