Instructions

  1. Dissolve the Jell-O: In a large bowl, dissolve the raspberry Jell-O gelatin in the hot water, stirring briskly until fully dissolved.

  2. Add Remaining Ingredients: Add the crushed pineapple, whole berry cranberry sauce, jellied cranberry sauce, and frozen raspberries to the bowl with the dissolved Jell-O. Stir until all ingredients are thoroughly mixed.

  3. Pour into Mold: Pour the mixture into a mold of your choice. Smooth the top with a spatula if needed.

  4. Refrigerate: Cover the mold with plastic wrap or a lid and refrigerate overnight, or until the mixture is fully set.

  5. Unmold the Fruit Mold: To unmold, run a sharp knife that has been heated in very hot water along the edges of the mold. This will help loosen the gelatin from the sides.

  6. Warm Water Bath: Next, fill a container with hot water. Briefly dip the mold into the hot water, ensuring it’s submerged for just a few seconds. This will help release the gelatin from the mold.

  7. Invert onto Serving Platter: Place a serving platter inverted over the mold (hold it tightly together), and then carefully invert the mold onto the platter. Gently lift the mold to reveal the beautifully formed fruit mold.

  8. Garnish and Serve: For an extra festive touch, garnish the fruit mold with pieces of kale or colorful lettuces. Additionally, if desired, you can prepare sugared fruits by dipping fresh cranberries and orange slices in raw egg whites, then coating them in granulated sugar and allowing them to dry. Arrange these sugared fruits around the fruit mold for an elegant presentation.

Enjoy this Cranberry Raspberry Fruit Mold as a refreshing and flavorful dessert or side dish at your next gathering! It’s a delightful combination of tart and sweet flavors that’s sure to impress your guests.
