Ingredients:

1 Chicken breast
2 Leeks
1/4 Cup olive oil
2 Cloves fresh garlic
2 Italian plum tomatoes
2 tbsp Olive spread
6 tbsp Breadcrumbs

Instructions:

    • Wash, dry, and cut the chicken breast in half, leaving the bone in. Season with salt and pepper. Set aside.
  2. Saute Leeks and Garlic:
    • In a frying pan on the stovetop, heat the olive oil over medium-high heat. Saute the leeks and garlic until beginning to lightly brown.

    • Add the cubed tomatoes to the pan.
  4. Cook Chicken:
    • Add the chicken breasts to the pan, bone-side down. Cover and cook for 7-10 minutes or until one side is browned.
  5. Flip and Brown:

    • Flip the chicken again. Coat each breast with 1 tablespoon of olive spread. Top with breadcrumbs, pressing firmly down onto the meat.
  7. Toast Breadcrumbs:
    • Flip the breast over to toast the breadcrumbs in the oil. Cook for 3-4 minutes.
  8. Serve:
    • Flip the breast over again, mound the leek and tomato mixture on top of the chicken, and with a spatula, remove to a plate.
  9. Garnish and Enjoy:
