Description: I “borrowed” this recipe from the kitchen at my college because I fell in love with these bars. They are so much better than store-bought, and you can add or subtract ingredients as you wish. They make a perfect on-the-go snack; a much healthier alternative to chips or cookies, especially for kids (Great for lunch boxes!).

Ingredients:

1 cup Brown sugar
1/4 – 1/2 cup Butter
1/4 cup Margarine
2 tbsp Sugar
1/2 cup Honey
1 tsp Vanilla extract
1 Egg
1 cup All-purpose flour
1/2 tsp Cinnamon
1/4 tsp Baking soda
1/4 tsp Salt
1 1/4 cups Rolled oats
1 cup Raisins
1 1/2 cups Chopped almonds 🌰 (optional)
1 cup Chocolate chips 🍫 (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease or spray a 9 x 13-inch pan with cooking spray.

  2. Mix Sugars and Butter: In a large bowl, beat together the brown sugar, sugar, butter, and margarine until light and fluffy.

  3. Add Wet Ingredients: Blend in the honey, vanilla extract, and egg until well combined.

  4. Combine Dry Ingredients: In a separate bowl, combine the all-purpose flour, cinnamon, baking soda, and salt.

  5. Mix Wet and Dry Ingredients: Gradually add the flour mixture to the sugar mixture, beating until everything is well combined.

  6. Fold in Remaining Ingredients: By hand, stir in the rolled oats, raisins, chopped almonds (if using), and chocolate chips (if using), until well mixed.

  7. Press into Pan: Press the mixture firmly into the bottom of the greased pan, ensuring it’s evenly distributed.

  8. Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the bars are light golden brown on top.

  9. Cool and Cut: Allow the bars to cool completely in the pan before cutting them into squares.
